Lemon Blueberry Scones

Bursting with blueberries and topped with a tangy lemon glaze, these easy drop biscuits are a mouthwatering treat!

Ingredients
  • 2 cups flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 oz. lemon yogurt
  • 1 egg, lightly beaten
  • 1/4 cup butter or margarine, melted
  • 1 teaspoon grated lemon peel
  • 1 cup fresh or frozen blueberries

Glaze:

  • 1/2 cup icing sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon grated lemon peel
Directions
  • Combine dry ingredients
  • Combine next four ingredients; stir into dry ingredients just until moistened
  • Fold in berries
  • Drop by tablespoonfuls onto a greased baking sheet
  • Bake at 400 F for 15–18 minutes or until lightly browned
  • Combine glaze ingredients; drizzle over warm biscuits
