Ginger–Pear Upside–Down Cake

Ingredients
2 tablespoons brown sugar
3 firm ripe pears
1
¼ cups flour
1 teaspoon ground ginger
¾ teaspoon baking powder
¼
teaspoon baking soda
¼
teaspoon salt
3 tablespoons oil
¾ cup sugar
1
½ teaspoons grated lime zest
1 teaspoon coconut extract
2 eggs
¾ cup buttermilk
Directions
Preheat oven to 350
℉ . Grease bottom of 9″ round cake pan; sprinkle brown sugar over bottom, shaking pan to coat evenly.
Peel, core and halve pears. Slice pears crosswise into
⅓–inch thick slices; spread evenly in pan making sure bottom of pan is covered.
Mix together flour, ginger, baking powder, baking soda, and salt; set aside.
With electric mixer, beat together oil, sugar, lime zest, and coconut extract in a large bowl. Beat in eggs until thick.
Alternately fold flour mixture and buttermilk into egg mixture until just blended. Pour batter over pears, smoothing top to cover pears completely.
Bake until a toothpick inserted in center comes out clean, about 35 minutes.
Transfer to wire rack. Let cake cool in pan on rack for 10 minutes, then invert onto a platter. Let cool slightly before slicing.
