Ginger–Pear Upside–Down Cake

Ingredients
  • 2 tablespoons brown sugar
  • 3 firm ripe pears
  • ¼ cups flour
  • 1 teaspoon ground ginger
  • ¾ teaspoon baking powder 
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 3 tablespoons oil
  • ¾ cup sugar
  • 1½ teaspoons grated lime zest
  • 1 teaspoon coconut extract
  • 2 eggs
  • ¾ cup buttermilk
Directions
  • Preheat oven to 350℉ . Grease bottom of 9″ round cake pan; sprinkle brown sugar over bottom, shaking pan to coat evenly.
  • Peel, core and halve pears. Slice pears crosswise into ⅓–inch thick slices; spread evenly in pan making sure bottom of pan is covered.
  • Mix together flour, ginger, baking powder, baking soda, and salt; set aside.
  • With electric mixer, beat together oil, sugar, lime zest, and coconut extract in a large bowl. Beat in eggs until thick.
  • Alternately fold flour mixture and buttermilk into egg mixture until just blended. Pour batter over pears, smoothing top to cover pears completely.
  • Bake until a toothpick inserted in center comes out clean, about 35 minutes.
  • Transfer to wire rack. Let cake cool in pan on rack for 10 minutes, then invert onto a platter. Let cool slightly before slicing.
