Fried Rice With Leeks

A new twist on fried rice… Excellent!

Ingredients
  • 2 medium leeks (white and light green portion only), chopped
  • 1 medium red onion or shallots, chopped
  • 3 tablespoons olive oil
  • 4 1/2 cups cooked rice
  • 1/2 teaspoon salt
  • 2 eggs, lightly beaten
  • 5 bacon strips, diced and fried
  • Pepper to taste
Directions
  • In a large skillet, sauté  leeks and onions in oil until tender, about 10 minutes
  • Add the rice and salt; cook until lightly browned, stirring frequently
  • Quickly stir in eggs;  cook and stir until egg is cooked
  • Sprinkle with bacon and pepper
