Mandarin Orange Spinach Salad

Add fresh Ontario strawberries for extra colour and vitamin C. Light, fresh–tasting and colourful.

Ingredients
  • 8 cups washed spinach, torn
  • 1 cup thinly sliced red onion
  • 1/2 cup dried cranberries
  • 1 can (11 oz.) mandarin orange segments, well-drained
  • 1/3 cup pecans, toasted

Dressing:

  • 1/4 cup vegetable oil
  • 2 tablespoons sugar
  • 2 tablespoons vinegar
  • 1 tablespoon snipped parsley
  • 1/2 teaspoon salt
  • Dash of pepper
Directions
  • Combine dressing ingredients and set aside
  • Prepare spinach, onion, and fruit
  • Toss with dressing just prior to serving
  • Top with toasted pecans
