Chicken Black Bean Salad

Ingredients
  • ⅓ cup oil
  • ¼ cup lemon juice
  • 2 tablespoons cilantro, finely chopped
  • 1 teaspoon sugar
  • 1 clove garlic, minced
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1½ cups cooked chicken, diced
  • 15 oz. black beans, rinsed and drained
  • 1 cup cooked corn kernels
  • 1 onion, sliced
  • 1 bell pepper, sliced or diced
  • Lettuce
  • Tomatoes, chopped
  • Shredded cheese
Directions
  • Combine the first 8 ingredients to make the dressing. Set aside for 30 minutes to allow flavours to blend.
  • Place shredded lettuce on individual plates or on a large serving plate; top with chicken, beans, corn, onion and bell pepper.
  • Drizzle with dressing and top with cheese and tomatoes.
