Apple Crusted Pork Loin

Ingredients
  • 2  tablespoons flour
  • 1  teaspoon mustard seeds
  • 1 teaspoon salt
  • ½ teaspoon sugar
  • 1  teaspoon rosemary, crushed
  • ½ teaspoon poultry seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon pepper
  • 1  boneless pork loin (4–5 lbs.)
  • 2  tablespoons olive oil

Apple Topping:

  • 1½ cups finely chopped, unpeeled tart apples
  • ½ cup brown sugar
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • ¼ teaspoon cloves, allspice or mace
Directions
  • In a small bowl, combine first seven ingredients; rub over roast.
  • In a large skillet, heat oil; brown roast on all sides. Place on a rack in a shallow baking pan. Bake, uncovered, at 325℉ for 1.5 hours.
  • Combine topping ingredients; spread over top of roast. Bake 1–1.5 hours longer or until meat thermometer reads 160Let stand 10 minutes before slicing.
