Main Course:
APPLE CRUSTED PORK LOIN
Stunning and succulent!
2 tablespoons flour
1 teaspoon mustard seeds
¾ teaspoon salt
½ teaspoon sugar
1 teaspoon rosemary, crushed
½ teaspoon poultry seasoning
½ teaspoon pepper
1 boneless pork loin (4–5 lbs.)
2 tablespoons olive oil
Apple Topping:
1½ cups finely chopped, unpeeled tart apples
½ cup brown sugar
¼ teaspoon salt
¼ teaspoon cinnamon
¼ teaspoon cloves, allspice or mace
In a small bowl, combine first seven ingredients; rub over roast. In a large skillet, heat oil;
brown roast on all sides. Place on a rack in a shallow baking pan. Bake, uncovered, at 325°F
for 1½ hours.
Combine topping ingredients; spread over top of roast. Bake 1–1½ hours longer or until meat
thermometer reads 160°F. Let stand 10 minutes before slicing. Yield: 12–15 servings.
Side Dish:
ROASTED VEGETABLES
5 cups cubed unpeeled red potatoes (about 1½ pounds)
7 medium carrots, cut into ½-inch slices
4 medium parsnips, peeled and cut into ½-inch slices
2 medium turnips, peeled and cut into ½-inch cubes
1 cup fresh or frozen shallots
1 medium red onion, cut into ½-inch wedges and halved
3 tablespoons butter or margarine, melted
3 tablespoons olive or vegetable oil
1 tablespoon dried thyme
2 teaspoons salt
½ teaspoon pepper
2½ cups Brussels sprouts, halved
3 to 4 garlic cloves, quarteredIn a roasting pan, combine the first six ingredients. In a small bowl, combine the butter, oil,
thyme, salt and pepper. Drizzle over vegetables; toss to coat. Cover and bake at 425°F for
30 minutes. Add Brussels sprouts and garlic. Bake, uncovered, for 30–40 minutes or until
vegetables are tender, stirring frequently. Yield: 20 servings.

6 large baking apples
½ cup white sugar
½ teaspoon cinnamon
¼ teaspoon nutmeg
1 cup brown sugar
1 cup flour
½ cup dry oats
½ cup butter, melted
Place apples in a greased 13″x9″ baking pan. Sprinkle with sugar, cinnamon and nutmeg.
Combine brown sugar, flour, oats and butter with a fork; sprinkle over apples. Bake at 350° for
40–45 minutes until apples are tender. Serve warm or at room temperature, with cream or ice
cream if desired. Yield: 10 servings
