Apple Crunch Quinoa Salad

Let this tasty combination of superfoods take center stage on your table.

Ingredients
  • 1 head of kale trimmed and cut into bite-size pieces (massaged with 1 TBSP of olive oil, a sprinkle of salt and a squish of fresh lemon)
  • 1 yellow pepper and 1 red pepper julienned
  • ¼ purple cabbage shaved
  • 1 sweet potato cubed and roasted with a spice mixture of salt, curry powder and cinnamon
  • 1 cup of cooked quinoa (cook your quinoa in a good veggie or chicken stock for lots of flavours)
  • ¼ cup hemp seeds
  • ½ cup crushed Martins Nothin’ but Apple Crispy Apple Chips

Classic Balsamic Vinaigrette

  • ½ cup olive oil
  • 1/3 cup balsamic vinegar
  • 2 tbsp maple syrup
  • 1 clove of garlic crushed
  • Salt and pepper to taste
Directions

The key to this salad is to massage the kale with a little olive oil, lemon juice and salt and don’t be afraid to really massage it. The salt and the lemon will tenderize the kale and you will never eat fresh kale again unless it’s been massaged. Layer this salad into a wide shallow dish with the quinoa on the bottom and drizzle the dressing over top of each layer. Then toss it all and garnish with crushed apple chips
