Because the fruit from our orchards is rushed to our state-of-the-art storage and packing facilities, we think the taste and crispness of our Martin’s apples is just about the finest and freshest to be found.
Apples take in oxygen and give off carbon dioxide as starches in the flesh change to sugar. In our airtight controlled atmospheric storage rooms, this respiratory process reduces oxygen – preserving the tree-ripened freshness of our fruit.
This non-chemical process gives us control over the nitrogen, oxygen, carbon dioxide and other gases in the atmosphere of our storage facilities room to within 1/10th of 1%. Temperatures are kept at a constant 32 to 36 degrees Fahrenheit. Humidity is maintained at 95 percent and carbon dioxide levels are also carefully controlled. Exact conditions in these rooms are set according to each specific apple variety.
