Pumpkin Blueberry Muffins

These muffins are very moist, and are always a hit!

1 ⅔ cups flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
1 cup pumpkin
¼ cup milk
⅓ cup oil
1 cup sugar
1 egg
1 cup blueberries



Streusel Topping:

2 tablespoons flour
2 tablespoons sugar
1 tablespoon margarine, softened




Toss the blueberries with a bit of flour. Combine the streusel ingredients and set aside. In a large bowl, combine the flour, soda, baking powder, salt and cinnamon; set aside. Blend the pumpkin, milk, oil, sugar and egg together and add to the dry ingredients. Mix well; then gently stir in the blueberries. Spoon into greased muffin tins and sprinkle with streusel. Bake at 350°F for 30 minutes or until toothpick comes out clean.
