Mushroom Chops

Since we raise pigs, we are always on the look-out for good pork recipes! This one is a favourite.

1/2 cup flour

1–2 teaspoons paprika

11/2 teaspoons salt

1/4 teaspoon pepper

6–8 pork chops

1/4 cup butter

1/2 cup chopped red pepper

1/2 cup chopped green pepper

1 medium onion, chopped

2 cups  sliced  fresh  mushrooms

2 cups  milk

2 tablespoon lemon juice

In a large resealable bag;  combine the first four ingredients. Add pork chops,  one at a time; toss to coat.  Set remaining flour mixture aside. In a large skillet, sauté  chops  until golden; transfer to a greased 13"x9" baking dish. In same  skillet, sauté  onions, peppers and mushrooms, adding more  butter if needed. Stir in reserved  flour mixture; gradually add milk. Bring to boil; cook and stir until it thickens. Remove from heat;  add lemon juice. Pour over chops.  Cover and bake at 350 F  for 50 – 60 minutes until tender. Serve with mashed potatoes.


Yield: 6 –8 servings.
