Mandarin Orange Spinach Salad

Add fresh Ontario strawberries for extra colour and vitamin C. Light, fresh-tasting and colourful.

8 cups washed spinach, torn

1 cup thinly sliced red onion

1/2 cup dried cranberries

1 can (11 oz.) mandarin orange segments, well-drained

1/3 cup pecans, toasted


1/4 cup vegetable oil

2 tablespoons sugar

2 tablespoons vinegar

1 tablespoon snipped parsley

1/2 teaspoon salt

Dash of pepper

Combine dressing ingredients and set aside. Prepare spinach, onion, and fruit. Toss with dressing just prior to serving. Top with toasted pecans.
