Lemon Blueberry Biscuits

Bursting with blueberries and topped with a tangy lemon glaze, these easy drop biscuits are a mouthwatering treat!

Lemon blueberry biscuits

2 cups flour

1/3 cup sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

8 oz. lemon yogurt

1 egg, lightly beaten

1/4 cup butter or margarine, melted

1 teaspoon grated lemon peel

1 cup fresh or frozen blueberries


1/2 cup icing sugar

1 tablespoon lemon juice

1/2 teaspoon grated lemon peel


Combine dry ingredients. Combine next four ingredients; stir into dry ingredients just until moistened. Fold in berries. Drop by tablespoonfuls onto greased baking sheet. Bake at 400 F for 15–18 minutes or until lightly browned. Combine glaze ingredients; drizzle over warm biscuits.

Yield: 12 biscuits.
