Fresh Cranberry Relish

Ontario cranberries and apples pair beautifully in this ruby red, tart-sweet condiment.

1 1/2 pounds fresh or frozen cranberries

4 sweet apples, washed, halved and cored (Ambrosia was used)

1 seedless orange (peel only half of it for more intense flavour)

2 cups white sugar

Cut apples and oranges in chunks. In a food processor or blender, grind together in small batches the cranberries, apples and oranges. Stir in sugar and allow to sit in refrigerator for at least 8 hours. Serve alongside turkey or ham. This relish keeps very well for over a week and is so much better than the commercial varieties!   


Yield: approximately 8 cups
