Chicken Black Bean Salad

Satisfy your cravings for a light Southwest meal with this attractive salad.

Chicken black bean salad

1/3 cup oil

1/4 cup lemon juice

2 tablespoons cilantro, finely chopped

1 teaspoon sugar

1 clove garlic, minced

1/4 teaspoon cayenne pepper

1/2 teaspoon salt

1/4 teaspoon pepper

1 1/2 cups cooked chicken, diced

15 oz. black beans, rinsed and drained

1 cup cooked corn kernels

1 onion, sliced

1 bell pepper, sliced or diced


Tomatoes, chopped

Shredded cheese


Combine the first 8 ingredients to make the dressing. Set aside for 30 minutes to allow flavours to blend. Place shredded lettuce on individual plates or on a large serving plate; top with chicken, beans, corn, onion and bell pepper. Drizzle with dressing and top with cheese and tomatoes.
