Black Bean Chicken Chili

"I randomly put this soup together one evening with ingredients I was in the mood for, and my children took numerous servings, and requested it to be made again the next evening! Hope your family and friends enjoy as well!" -Marge Martin




1 tablespoon oil
1 small onion, diced
2 chicken breast, cubed and cooked
1 1/2 cups chicken broth
2 cups frozen corn
1 (19 oz.) can of black beans, rinsed and drained
2 large tins of diced tomatoes
3–4 tablespoons cilantro (optional, but increase parsley amount instead)
3–4 tablespoons fresh parsley
2–3 sprigs thyme
1 tablespoon salt
1 tablespoon garlic powder
black pepper to taste
2 teaspoons chili powder
2 teaspoons cumin
1 (5.5 oz.) can tomato paste
Squeeze of fresh lime wedge, optional


Fry onion in oil until soft. Add rest of ingredients and simmer 10–15 minutes.
